A delicious bean salad with simple ingredients that’s so quick and easy to put together!
You’ll need:
1 X 400g tin of butter beans
1 X 400g tin of chickpeas
100g cherry tomatoes, quartered
1 bunch of spring onions, finely chopped
200g roasted leeks
100g rocket
Handful of small basil leaves, torn
Dressing
160ml red pepper roasted pesto
50ml olive oil
3 garlic cloves
100g toasted almonds
100g roasted peppers (from a jar, drained)
150ml olive oil
1 Tbsp balsamic vinegar
2 tsp lemon juice
Vegan mayonnaise (optional)
Here’s how:
- Drain the tins of beans and chickpeas.
- Put salad ingredients together in a bowl and mix well.
- Mix together the dressing ingredients and pour over the salad. Enjoy!
