Jackfruit is all the rage right now and we just can’t get enough of it! We recently discovered Jackfruit Confit, which makes a delicious topping on sweet potatoes. Make a few to enjoy with friends, or indulge a healthy and tasty meal for one.
(Serves 1)
You’ll need:
1 sweet potato
1 tin of Young Green Jackfruit Confit*
Here’s how:
- Scrub the sweet potato clean and bake in the oven for approximately one hour, depending on the size of the sweet potato.
- Remove the contents of the Jackfruit Confit tin and roast in the oven for approximately half an hour (it should be crispy on the outside).
- Slice the sweet potato in half, top with the roasted Jackfruit and the remaining oil from the tin and tuck in!
*The Jackfruit Confit we used is marinated in rosemary and thyme, but you can also get a Bar-B-Que version.
